be careful with leg extensions, the higher the weight the more pressre u r putting on ur knees. same with hammys...I don't like to go super heavy because it increases chance of injury. just do enough to work the muscle...ur size and shape will come from cumulative exercises (squat/leg press).

Yo idk if u could have whey while your on Paleo but if u can and u do scoop up those egg whites you could make some bomb smoothies with them.
You could get creative and do whatever but I like 16oz of eggwhites two scoops vanilla whey with like 4-6 strawberrys depending on the size and a handfull of blueberries. Try that bro u won't be disapointed.
