I understand if you are trying to go low carb, but it may not come out as expected. Glad you enjoyed the recipe. You should be seeing a lot more from me off their webpage and their requests.
I personally have never uses coconut flour, so I can't chime in.
Just get regular complete pancake mix. Rises very nice and creates a great baked good. A reason why I use it so much in my recipes (pancakes, muffins, waffles etc..)
I found some Kodiak Cake pancake mix. Unfortunately the smallest pan I have is 7". Hope that doesn't affect it much.
Never used Kodiak either.. the walmart extra fluffy works great! 1.62$ a box.

The wet base on the frosting was avocado and vitafiber. Very pleased with taste and consistency.

Ingredients:
-1.5 cups Kodiak Cakes Power Mix
-1.5 scoops Snickerdoodle Select protein
-2 tbsp extra virgin olive oil
-1.5 cups skim milk
-1 tbsp molasses
-2 tsp Stevia
-1 tsp baking powder
-1/2 tsp baking soda
-1 large egg
-2 tsp cinnamon
-1 tsp ginger
-1 tsp nutmeg
-1 tsp allspice
Glaze:
-1/4 cup pumpkin puree
-1/2 scoop Select Snickerdoodle protein
-2 tbsp dark brown sugar
-1.5 tsp pumpkin pie spice
-Optional Topping: White Chocolate Drizzle!
Directions:
-Preheat oven to 375
-Mix together all dry ingredients and whisk
-Add wet ingredients and mix well, we want a thin batter, add water if needed.
-Transfer to a small, greased Bundt pan and bake for 15-20 or until a toothpick comes out clean
-Let cool, mix together glaze ingredients in a small bowl. Top once cooled.
-Devour, grow
