SnickerDoodle Banana and Peanut Butter Chip Muffins



Recipe

Dry:

100g Complete Pancake Mix/Flour
3g Splenda
Baking Powder (5g)
8g SF/FF Pudding Mix (Vanilla)
10g PB Lean (SnickerDoodle)
30g Peanut Butter Chips Chips (Reese)
1 Scoop Select Protein (SnickerDoodle)
Wet:

25g Yogurt
1 Egg
1 Egg White
1/2 Cup Milk (I used almond) Around 100g
100g Banana



Directions:

Combine all Dry (Whey, Pancake Mix Baking Powder, SF/FF Pudding Mix, PB Lean, and Splenda)

in a separate bowl mix the Egg + Egg White + Yogurt + Milk + Banana and mix together. You will then add the wet into the dry and then combine both and lastly sprinkle in the Peanut Butter Chips.

Pre-heat oven to 350 degrees and then use cooking spray on your muffin pan/sheet to prevent sticking.

Transfer the mixture to the Muffin Pan and bake for 20-25 minutes, use a toothpick to check Muffins if they are finished (it will come out with no residue on the toothpick)

Allow to cool for 5-10 minutes and then Enjoy!!!

All of them are very low kcal , and most are around 200-500/600 kcal for the entire thing or a smaller serving, you could try halfing the recipe
Very good point. Most would fit any possible diet.
 
First successful PES Select protein recipe for me!

I copied one of our recipe submissions. :)

- One scoop of Snickerdoodle Select.
- Three egg whites
- 50ml coconut milk (water with a small amount of coconut added for flavour).

That was it. Added a chopped banana and sprinkled on some cinnamon.

They were really, really good. Surprisingly good considering it was high protein, very low carb and very low fat.

I am definitely going to make these more. :)

Select Snickerdoodle Cinnamon bun pie

A pie dressed and flavoured like a cinnamon bun, gluten free.

Calories per slice (cut into 8 ): 145
4.3g fat, 19.7g carbs, 6.8g protein


Ingredients:

2 cups white kidney beans, rinsed/drained
1 scoop Snickerdoodle Select Protein
1 cup gluten free quick oats
1 1/2 cups splenda (or sugar)
1/4 cup unsweetened applesauce
3 tbsp cinnamon
2 tbsp oil (I used extra virgin olive)
1 tbsp vanilla extract
1/2 tsp baking soda
1/2 tsp salt


Directions:

1- Preheat oven to 350, coat a 10' springform with cooking spray.
2- Put all ingredients into a large mixing bowl
3- Use an immersion blender to thoroughly mix everything together and make a smooth batter
4- Pour batter into springform, place in oven and let it bake for 35 minutes.
5- Let it cool at room temperature 10+ minutes then either dig in, refrigerate, or top it with icing.

Topped mine off with an icing swirl for appearance:

Just cant wrap my head around eating beans as the base.
 
To be fair, as much as the idea of spinach perturbed me I do know people who have made chocolate cakes with beetroot as the base and they say you can't taste it at all.

I would be more inclined to use beans. I might give one of these a go. :)

If I could eat gluten I would lol. A lot of gluten free stuff sucks.

This was in the pan with just enough coconut oil to stop it from sticking.

I got my girlfriend to taste them. She despises anything protein powder related and she said apart from being a bit chewier than normal pancakes they were very good.

Lol I have tried the beetroot chocolate recipes a couple times. Brownies and a mini cake, its a lot of hassle, a lot of red staining on everything, and they have a really strong taste no matter how much cocoa/sweetener I used. If you like beets go for it but not my thing.

Pumpkin is the easiest thing to mask with chocolate in my books, and it gives a good fudge consistency, My chocolate cake I posted is one of my most used recipes by myself.

My next recipe will be gluten-free as well but no veggie fillers. Breaking out the coconut/almond flours.
 
Actually, your pumpkin one was the next one on my to-try list.

I am not sure how available pumpkin is at the supermarket in England though except for halloween. Perhaps I will look down the tinned aisle.

Select SnickerDoodle and Banana Pancakes



Recipe

Dry:

70g Complete Pancake Mix
25g Select SnickerDoodle Whey
3g Splenda
Baking Powder (5g)
8g SF/FF Pudding Mix (Vanilla)
10g PB Lean (Banana Bread Flavor)

Wet:

2 Egg White (Stiffened to a firm peak)
1/4 Cup Milk (I used almond) Around 75g
100g Banana (Diced up)



Directions:

Combine all Dry (Whey, Pancake Mix Baking Powder, SF/FF Pudding Mix, PB Lean, and Splenda)

in a separate bowl mix the egg whites and stiffen to a firm peak (by mixing with a hand mixer for 3-5 minutes until they foam up and become very thick)

Then add in the Diced Banana, Almond milk to the dry mixture on top of the egg whites (Which you will fold in) and use a hand mixer to stir the mixture together it should come out as a cake batter or thick consistency.

Pre-heat a griddle on a stovetop to a medium heat (best to cook pancakes) or else they will burn or get a bit crispy (which is not a good thing).

Distribute a portion of the batter and spread it out in a circular shape(pancake) and allow to cook for 1.5-2 minutes until it starts to bubble and flip with spatula

Allow to cook for another minute until bottom gets a golden brown color to it.

Rinse/Repeat Process until all batter is used and enjoy!

Carbs -- 80g
Fat -- 7g

... but yes, I do. Even though she tells me she doesn't want to try it lol.

I like knowing how they compare to normal versions of foods i.e. low carb protein pancakes vs the regular ones she eats.
 
Most of the protein treats i make (larger batches) ill use at family gatherings, they have no idea they are healthy.

Same here, although I've done it so many times they know/assume what I brought is healthy and packs some protein now.

Just means they know they can eat more of it, which they do

Made this today for a friend's daughter's 7th birthday.

Select "Ice Cream" (without the ice cream maker)

1sc SELECT (flavor of choice)
1c FF Cottage Cheese
1/8c Water

Mix together and throw in the freezer for 2-3hrs or unitl ice cream consistency. You can also blend the mixture to remove any chunks from the cottage cheese of you want. No cooking necessary ha.

Recipe

Dry:
50g Select SnikcerDoodle Protein
1 Cup Splenda (Used 50g)
60g Pancake Mix/Flour
1 Tsp Baking Powder
½ Cup Oatmeal
50g Chocolate Chips’s
8g SF/FF Pudding Mix
10g PB Lean (SnickerDoodle)

Wet:
50g Greek Yogurt
50g Plain Yogurt
1 Egg
1 White
1 Tbsp Light Butter
Tsp Vanilla Extract


Directions

Pre-Heat Oven to 350 Degrees

Combine Whey + Splenda in a bowl and mix with it Greek Yogurt, Vanilla Extract, and Plain Yogurt and Butter to make a thick paste using a hand mixer.

Add 1 Egg and 1 Egg White to the paste formed with the Whey + Splenda + Yogurt + Vanilla Extract + Butter.

In a Second bowl combine Pancake Mix, SF/FF pudding Mix, PB Lean, and baking powder, this will be added into the original bowl with the whey, yogurt, and Splenda made into a paste plus the eggs. (Can use a spoon to mix here)

In a Third Bowl combine Oatmeal + Chocolate Chips. This will be added last into the main bowl and mixed together (again using a spoon)

Take a large spoon and use to form rounded tablespoons and drop them on a cookie sheet, which will be baked for 12-15 minutes at 350 degrees. Eye these; they may cook a bit quicker, so check at 10 minutes to see if they are done.

Allow to cool for 5-10 minutes prior to eating.

Enjoy!
