But, people would love this, no? Healthy and tasty. Best of both worlds. I wish there was someone here doing what you do.

If there is little demand, starting that up would just mean a net loss in profit when you factor in all the other costs associated with opening a store (production, rent, machinery, operations etc.)
Some people loving it does not always mean mass consumers. You have to remember 90% Of America could care less about healthy baked goods. Our country is too busy with loving frozen TV dinners and being obese.

Starting a business like that is very very hard especially in an industry that is saturated with protein bars and cookies (which has risen drastically the last year)
 
A guy opened a restaurant 2 door up the street from us in January of this year spent over 2 million dollars on the Ground and Building, just closed down last week Bankrupted !!

Yeah 40 % of businesses close down after 2-3 years 90% close after 5. That said , some people wait 2-3 , even 5 etc years after failing and try starting up again
