You can take it all at once with your pre-workout but if you get the runs split it 2 or 3 doses throughout the day.

I am thoroughly and completely unconvinced that lecithin requires refrigeration to maintain a reasonable shelf life. Longer shelf life? Sure. But that applies to virtually anything that's going to oxidize or degrade.
