Nice, I have used and apple and cherry combo on a pork shoulder before and it came out awesome! Also, it looks like I will be cooking in the garage. I have grey felt like finished walls in there from the previous owner who had it set up as his gameroom. So that dang smoke smell will stick around a week or two, but the grub will be worth it. The felt comes in handy because anything that has velcro I can just stick to it instead of having to buy or install hooks for it. Should be about a 4-5 hour cook with 2 8lb bone in slabs of beef.Most definitely!

I got mine in the fridge yet, I’ll be cooking it for Christmas dinner tomorrow. We will see if it will be feet of snow to get to the smoker! I decided to try a fruitwood competition blend for the pellets this year![]()
I had to adjust my workout plans. I am heading to the store for some last minute stuff then will end up working out in the garage while the meat cooks.
