These look nice and crispy... nice combo too
I tried for crispy because the last ones were full and fluffy. The PB taste is overpowering, tbh.

I've never seen it and I go through the baking aisle every time I go in a store.

< 10g sugar (mostly from Greek yogurt)

Chocolate brownies. Made them with almond butter and you can really taste it in there.

This recipe is stupidly easy
For the dough I used:
300g of Power Cakes mix (Kodiak cakes)
300g of NF plain greek yogurt
Sweetener to taste (I used baking Sucralose)

-Mix sweetener and Yogurt
-slowly incorporate the Power Cake mix until the "dough" starts to pull from the sides of the bowl *it shouldn't be sticky and will look like this

-I rolled mine out on a silicone baking sheet but parchment paper would work fine
-Mix SF syrup and 1t of cinnamon and spread on rolled out dough

-tightly roll and place in freezer for 10 minutes to firm
-cut into 1" rolls (PROTIP: use floss)
-place in a greased crockpot (I did a thin spray of PAM and wiped it down with some paper towel)
*they may look a bit wompy, but have a little faith ;)

-cook on high for an hour

I managed 10 cinnamon rolls so that makes these pretty darn macro friendly

Good tip for ice cream maker and swirl.
before its just about finished, add a little bit extra of what your making, but i added extra food coloring to make it stick out :)

Chef Bob strikes again!

In other news I just passed 2 interviews and my workplace testing for a huge gourmet dessert supplier here in Canada.

Expecting a call today/tomorrow, interviewers said I was pretty much in.

Supplies grocers, M&M, anywhere that offers nicer desserts not made in house (eg. Starbucks)

Hundreds of dessert items, all from scratch, fresh dairy ingredients are even made there, real cream cheese, heavy creams, high% cocoa butter real chocolate...

Excited to learn more about proper dessert making so I can start to apply it here

Oh and I get free unlimited cake.

She's also vegetarian and refusing meat her doctors are pushing on her

this is just awesome on every level... no way to cheer someone up faster than good, healthy, and much needed food that plays on aspects of life that will distract you from some of the harsh realities... every hospital should have a "treat baker" for stuff like this.

Thanks guys,

The littlest of things can make an entire day for someone having a rough time.
Even just bringing Luna up (she loves our dog)

It was kind of baffling this hospital has no vegetarian protein source except cottage cheese, which she wasn't keeping down (or enjoying)

But I'll veer back to recipe talk

Hospitals don't cater to individual diets here either. I can't speak for Canada, but all the hospitals I've been to you being your own food if you want anything decent.

What's the frosting? Looks like it's nice and solid.

It's a hard coating, just Wilton Baking Chips, with pink glitter added to half of it.

Holds them together nicely as these would otherwise sag/flatten in time

Plus I wasn't trying to limit carbs, she needs to eat right now

Featuring VitaFiber and Epic Spreads but for those without, use any syrup and nut butter or spread!

Ingredients:
-100g Vitafiber
-1 scoop Select Frosted Chocolate Cupcake
-2tbsp coconut flour
-1/4 cup almond flour
-2 tbsp Chocolate Epic Spread
-1 tbsp unsweetened cocoa powder
-1 tsp vanilla extract
-0.5 tsp almond extract
-1.5 tsp Stevia
Coating:
-1 serving Wilton Cake Decorating vanilla candy melts
-optionally add pink food glitter or very little red food colouring to half of the coating ✨

Directions:
-Combine all base ingredients in a medium bowl, wet ingredients first, mix with a spoon. Should come out quite thick and not too sticky, if not, add another tbsp coconut flour and repeat.
-Tear off sections (about 10) and roll into balls, place on wax paper or even a plate
-Refrigerate 1 hour, re-roll if gravity got them down ;)
-If desired, divide coating and add preferred colouring, a few drops of red will get pink as shown
-Melt your coating (candy melts or use white chocolate) dip truffles into this and refrigerate another hour
-Devour

Finaflex Clear Protein Vanilla Cakebatter


Calories per 1/8: 123
Fat: 4g
Carbs: 8g
Protein: 13g
shown in 1/4's and 1/12's


Ingredients:
CAKE-
1 cup Vanilla Cakebatter Clear Protein (100g)

2 tablespoons coconut flour (18g)

1 teaspoon baking powder

1 cup unsweetened applesauce (222-244g)

4 tablespoons 60% Cacao Chocolate Chips (I used large; 30g)

FROSTING-
4 tablespoons Greek cream cheese (56g)

1 scoop Clear Protein Vanilla Cakebatter (36g)

1 tablespoon erythritol (8g)

1/4 cup ***e 0% Greek yogurt (56g)

Instructions:

Preheat oven to 325F, line pan with parchment paper, spray with nonstick spray (I use coconut oil spray).

Mix Clear Protein powder, coconut flour, and baking powder.

Add applesauce. Mix well.

Lightly stir in chocolate

Bake for about 25 minutes, and check to see if the cake is firm. If not, check every 1-2 minutes until firm and a toothpick comes out clean. Be careful not to overbake.
Remove cake from oven, and let cool.

In a small bowl mix room temperature Greek yogurt cream cheese, ***e Greek yogurt, erythritol, and Clear Protein Vanilla Cakebatter to the consistency of frosting.

Frost cake after cooled

I sprinkled unsweetened cacao powder on the top, but you could drizzle a protein/yogurt mix or add more morsels if you wish.

Cut into pieces, and enjoy!

That coffee cake looks like the real deal, Bob. You nailed it
Adding cinnamon and then rebaking it gives it that nice glaze.
its like if you ever cooked chicken in a skillet, and then add cinnamon. Add a bit of water and steam it on top. It forms a nice glaze.
