Holy Basil Chicken

Ingredients
3 Tablespoons Olive Oil
2 Tablespoon Chopped Garlic
2 Tablespoons Thai chili paste
12 Ounces chicken breast, cubed
1/2 cups sliced mushrooms
1/2 tablespoon coconut aminos
1/3 chicken stock
1/2 cup sliced pepper, mixed
1/2 cup holy basil (Ga-Prao)
Steamed jasmine rice

Directions
Heat the oil in a large saucepan. Brown garlic in pan. Add the chile pepper paste and stir well.
Add the cubed chicken and cook it just halfway done. Reduce the heat to medium and add the mushrooms, sweet soy sauce, and chicken stock. Mix well.
When all the ingredients are almost cooked, add the red bell pepper and the holy basil. Mix well. Serve over steamed jasmine rice.

I love dishes served over rice...when I lived in the PI I ate rice 3 times a day-everyday and got to really like it!!!

Healthy Birthday Cake Donuts

Recipe



Dry:

1/2 Cup Complete Pancake Mix (60g)

1 Scoop Vanilla Whey (30g)

1 Teaspoon Baking Powder (3g)

1 TeaSpoon Splenda (3g)

Dash Sprinkles (3g)



Wet:

1 Egg

3 Tablespoons Greek Yogurt (50g)



Frosting:

2oz Greek Yogurt (50g)

1/2 Scoop Vanilla Whey (15g)
Dash Sprinkles (3g)



Directions:



Pre-Heat Oven to 400 degrees.

1) Combine dry ingredients (Whey, Pancake Mix, Baking Powder, Splenda, and Sprinkles)

2) Combine wet ingredients with dry and mix to form the batter.

3) Use cooking spray to coat a donut tray. Transfer batter just enough to fill the bottom of the cups.

4) Bake for 9-11 Minutes

5) Pull out of the oven and allow to cool

6) Make frosting by putting together whey and yogurt. Transfer to a Ziploc bag. Cut a small hole in the corner squeeze the frosting out

7) Rinse/Repeat till all donuts are frosted. Dash with sprinkles

8) Enjoy

Shellless Egg Roll

Ingredients
Olive Oil
Cabbage Slaw Mix 12 ounces
1/4 cup chopped onion
1/2 pound ground meat (lean turkey or beef)
1 cup shredded carrots
1/2 cup chopped scallion
1 teaspoon chopped garlic
garlic powder
onion powder
salt
pepper
coconut aminos soy replacement (can use soy sauce as well)

Directions
In large sauté pan add olive oil, garlic and onion. Saute till golden. Add meat and cook till browned. Add cabbage and carrots and cook until tender. Season with garlic powder, onion powder, salt and pepper. Top with coconut aminos and simmer for 5 minutes. Top with scallions and serve.

Healthy Chocolate Chip Brookies
Recipe

Dry:
1/2 Cup Complete Pancake Mix (60g)
1 Scoop Vanilla Whey (30g)
1 Teaspoon Baking Powder (3g)
1 Teaspoon Splenda (3g)
1/4th Cup Chocolate Chips (25g)

Wet:
1 Egg
3 Tablespoons Greek Yogurt (50g)
Water to form batter consistency

Directions:

Pre-Heat Oven to 400 degrees.
1) Coat 9x9 Pyrex dish or brownie tray with cooking spray.
2) Combine dry ingredients (Whey, Pancake Mix, Splenda, Baking Powder, and Chocolate Chips)
3) Combine greek yogurt and egg into dry ingredients and mix to form the batter. Use extra water if the batter is too thick to get the right consistency.
4) Transfer the mixture to the tray and bake in the oven for 15-20 minutes.
5) Pull out of the oven and allow to cool
6) Pull out of the oven, allow to cool for 5-10 minutes
7) Cut into 9th's and enjoy!

Dirty Mexican Mixed Fajita Stirfry



Ingredients:
4oz Chicken
4oz Lean Turkey (93/7)
2 Cups Jasmine Rice
Dash Cajun Seasoning
Dash Paprika Seasoning
Dash Sea Salt
Dash Black Pepper
1 TBSP of Salsa
1 TBSP Trader Joes Green Dragon Hot Sauce
Garnish of Green Onion
Sauteed Peppers

1) Cook the meat until finished and set aside
2) Boil or microwave the rice (you can use the jasmine rice cups) set aside after cooked
3) Sautee peppers in a skillet and add the spices, chicken, and rice
4) Put the salsa and hot sauce on top and stir everything together.
5) Plate and then throw on the green onion garnish

Simple yet easy meal

Honey pecan pork ribs
2 Tbs Salt
1-3/4 C Honey
1/4 C Pecan flour
1/4 C Chopped pecans
1 Tbs Paprika
6 oz Bourbon (I use Evan Williams Black label)

Mix Salt, Honey, Pecan Flour, Paprika and bourbon in a sauce pan and bring to a slow boil. Stir continuously. Let simmer another 5 minutes then remove from heat and let cool.
Baste ribs (both sides) and let sit in refrigerator overnight. Smoke ribs at 185° for 1 hour then mix chopped pecans into remaining baste and reapply. Let smoke for one more hour at 185° then remove and wrap completely with foil. Turn heat up to 300° and continue to cook until you can pull one of the ribs from the meat with ease. Remove from smoker and let rest for 30 minutes. Open foil and enjoy.

Pulled Pork Grilled Cheese



6oz Pulled Pork
2 Slices Bread
1 TBSP Butter
2 Slices Cheese
Dash of Wegmans BBQ Sauce


Crockpot the (I do 4-5 pounds in 1L Diet Soda) Pork for 8-10 Hours in Diet Soda. Drain and set aside
Turn a skillet to medium heat, melt 1 TBSP Butter
Place the pulled pork, bbq sauce, and cheese between the bread slices
Cook for 2-3 minutes until golden brown, flip, and repeat the process until the other side is the same.
Serve, Cut in Half, and Enjoy!

1) Combine dry ingredients (Whey, Pancake Mix, Baking Powder, Pudding Mix)
2) Combine pumpkin and egg into dry ingredients and mix to form the batter. Use extra water if the batter is too thick to get the right consistency.
4) Use cooking spray to coat donut pans.
5) Transfer batter
6) Bake for 12-15 Minutes
7) Allow cooling for 3-5 Minutes
8) Enjoy

Steak Fajitas

8oz Top Round Sirloin
Peppers/Onions
Green Onion (Garnish)
21 Seasoning Salute, Everything but the bagel seasoning, cajun seasoning, black pepper and sea salt
1 Cup of Jasmine Rice

In a skillet on medium heat sautee peppers and onion --> Set Aside
Cook Top Round. I like to sear 1-2 minutes a side and then finish in the oven at 400 for 10 minutes to char the outside
I use the jasmine rice cups at the grocery store. Pop in the microwave for 1 minute to 90 seconds.

Once the top round is done in the oven mix together peppers, onions, and rice
cover with seasonings and any sauce of your preference and enjoy.

2 oz greek yogurt for icing is roughly 3 tbsp? Is that amount per cupcake, meaning 12 oz total needed for all 6 cupcakes?

You can weigh it out if that is easier.
1 TBSP ~ 16g, so not far off.
This is why the directions/ingredients include "Entire Recipe" and "Per serving/cupcake/loaf/blondie" under macros.
This way you know the calories for the entire recipe, and if you break it down into X or Y amount (I just take the total and divide)

Some of my favorites aren’t exactly “macro friendly” but made some beef bulgogi the other night that smacked as the kids would say. I’ll post the recipe later.

Salt and Pepper Chicken is also a go to of mine. I don’t deep fry mine though.

This is a cheesecake i been doing for years now. tastes awesome and might be friendly to your macros if you can shift other thing around. I remember I got a recipe for a different type and I just started adjusting as time went by. its super easy and delicious

1.5 cup of fat free cream cheese
1 1/4 cup plain greek yogurt
2 whole eggs
1-2 stevia
1/4 milk
1 tsp of vanilla extract
2 scoops of whey (your choice of flavor)

preheat to 325
soften the cream cheese in a bowl by pressing it down
add eggs and stevia, mix with an electric mixer
add the rest and mix for 2 more mins
pour in the baking pan
bake for 25mins and then lower to 200 for an hour.
let it cool in the fridge for 4 hours.

dont remember exactly the nutritionals but I THINK it was like: 200 cals, 3 fat, 15 carbs, 3 sugar and 30 protein?

Dash of Cinnamon (1g)



Wet:

1 Egg

3 Tablespoons Greek Yogurt (50g)





Directions:



Pre-Heat Oven to 350 degrees.

1) Combine dry ingredients (Whey, Pancake Mix, Baking Powder, Cinnamon, and grated Carrot)

2) Combine wet ingredients with dry and mix to form batter.

3) Use cooking spray to coat a muffin trey. Transfer batter

4) Transfer the mixture to the muffin trey and fill each hole half way.

5) Bake for 12-15 Minutes

6) Pull out of oven and allow to cool

7) Enjoy

Hey there, thanks for posting this contest to share recipes! I love trying out new recipes, especially if they're keto-friendly or involve smoothies.
