Need some advice.

For bulking up and adding muscle mass, which would you guys say is better?

Option 1:

Example:
Mon-Chest

Tue-Biceps/Triceps

Wed-Legs

Thu-Shoulders

Fri-Back

Sat-Rest and eat

Sun-Rest and eat

Option 2:

Example:

Mon-Chest/Triceps/Shoulders

Tue-Rest and eat

Wed-Legs

Thu-Rest and eat

Fri-Back/Biceps

Sat-Rest and eat

Sun-Rest and eat
 
try not to do similar muscle groups back to back IE: monday: chest, tuesday: tri's. either put them together on the same day of at least 2 to 3 days apart, just my $.02. as far as the rest goes, concentrate on compound lifts mostly, and longer rest between heavy sets. and of course EAT (as you already know).

Abs and Legs

You are in the gym just 3 days a week. It keeps your motivation high so a year from now you are still hitting it hard while some others who go 5 or even 6 days a week have given up or are on a hit or miss basis.

I agree with Crowler. Its easy to stick to and you will continue to see results for a long time. As you get more motivated, you can start splitting certain parts out to their own days, such as moving shoulders or arms to their own day. (depending on your goals)
