my thanksgiving breakfast was fresh ground sage sausage, 4 large eggs[one was a double yoke]and hash browns---mmmm.

I've got 2 slabs of baby back, 2 beer can chickens, and a tri-tip steak on the menu today

today was bacon day, my wife has perfected frying bacon-mmm...and the aroma of bacon permeating throughout the house is soo good!!!

Maybe try a mix of apple and pecan. Or I’ve seen people soak chips in water and whiskey! Gives it a nice flavor.
 
No pictures of the pork shoulder steaks I did tonight but I did get a pic of what I used the coals for once I was done with the steaks. 😂

What you suggested is exactly what I did that go around.
I'm thinking I move the top of the grill around from time to time instead of the holes being directly over the meat maybe that would help

Finally got around to smoking some more meats. These are ribs from the hogs we butchered at Thanksgiving.

Nice looking turkey, we cooked a 10lbs chicken.
 
Went to the store today and got 3 beef roasts on sale to make some beef jerky. One looked so nice, I couldn't resist cutting it up into 3 steaks and grilling them tonight. Threw on some garlic parmesan asparagus as well.
**Sorry I didn't think about getting a picture of it until I was done making my lunch for tomorrow and was putting it up. 🙄

The steaks turned out really good and tender without grissel. Got 3 steaks out of a 3.6 lb roast that I paid $16 for. That's a win in my books any day!
