I have a nitrate thread around here somewhere. While hotdogs arent really a great source of protein, I wouldnt be too concerned over the nitrites in them.
The issue is nitrosamines not nitrates. There is considerable debate on Nitrosamines but they seem to be pretty harmless all tings considered. In the 70's and 80's there was a huge movement to find carcinogens in the diet. Each one was headlined as "the cause of cancer" until the 90's and beyond and the number of carcinogens discovered was so massive it wasn't even news anymore. Thus poor things like saccharin (anyone remember Orbit Gum) and nitrosamines got this huge black eye.
Hot links for the win, although do love me some cheese dogs mmm. Chorizo I only eat on tacos not whole but good as phuck. Even polish kielbasa is delicious a little syrup. I just love meats......no homo
