Try chocolate muffins. Pretty much same ingredients as the cookie recipe with slight differences but still very easy and quick to whip up and bake.

Mix up a sludge for extra epic toppingness!

Oats are one of the worst things to cook/bake with. They are very dry/dense in nature which will cause the final product to be on the dryer side and prevent the product from rising to its best/peak. Hence why i use Pancake mix/flour the majority of the time
I will use oats from time to time due to user request, but some things oats are good for are binding agents like puddings, crusts (For cheesecake), and oatmeal bakes are not too bad, but again i do not tolerate oatmeal well so i limit it as much as possible.
 
I am not a pretzel fan (hard or soft), but Bob's protein covered pretzel's are hnnnngggg!

And I've tried three flavours ;)

I see your snickerdoodle cookies have ground oatmeal. Could I just use an equivalent in pancake mix or flour and have good results in your estimation?
 
i do a 50/50 mix. Just for the texture i dont use 100% all oats in recipes. again the texture is what i use them for, or like i said for cheesecakes they make a good crust cause of the crunch (can also crush up or grind cereal) as well which i have used in a cinnamon roll recipe before and came out pretty decent.

yeah you could use all flour/pancake mix but the beauty of cooking is tweaking recipes to see what works best!
 
Blondie just came through awesome in cheesecake.

Snickerdoodle is for my grain/bread type of recipes from oats to pancakes to cakes

Crazy thing, I like Snickerdoodle as a Blondie better than Blondie lol

Another round of protein crispy squares... I went more chocolatey this time and used Cookie butter :) Also added crushed graham cracker and chocolate chunks.

Cool, you would probably take it to another level.

Yeah, so simple especially if you use the marshmallow fluff mix but can also use store bought fluff or melt marshmallow (just more clean up). This batch with cookie butter is super rich and sooo tasty. I made them for my sister who's coming over, but going to make another one for myself for the work week :)

20g LC Foods Marshmallow fluff mix
3 scoops chocolate protein
100g sprouted buckwheat (replace with puffed quinoa or rice crispies, etc)
100g whey protein crisps
4 tbsp. Cookie butter
6 crushed graham crackers
3 Oz chocolate chunks
(add in water and/or egg whites to reach desired consistency)

Is this the recipe that is right under the post I'm quoting.

I've made protein muffins before.. they just come out super dry. I guess I can't complain much when I'm asking for both low fat and low carb

You can stay low fat/carbwhile not being super dry. You can try pb2 or pb lean for a little more volume and could use apple sauce too.

Just made a batch of chocolate rice crispy treats (currently in freezer).

Macros per serving (9 servings)
Fat - 3
Carbohydrate - 24
Protein - 5

We will see how they taste and came out tomorrow post leg workout.
 
More fun with it this morning.

It takes 5 minutes to cook so pretty convenient.

Pancake mix + Select + whole egg + splenda

In machine 5 minutes, no sticks
