Meat lover's food porn.

I have an electric masterbuilt smoker. I need your help lol. I've tried 2 briskets on it. Low and slow. Both came out dry.
I did a brisket last week.. First time. Everything on the internet said 1 hour per lb.. I pulled a 3lb brisket off after 6 hours.. Not sure I'll do that again.
I love doing the Boston butt on my Weber kettle pit. Perfect every time.
I did let the brisket sit in foil and towels in the yeti for 2 hours.

If I was able to get the one I posted earlier, my wife would definitely make me get my catering license then. Looked in to doing that a while back but didn't want to jump through all the hoops like a circus animal for the state to just be able to do something I might do once or twice a month.

What do you do to get your bark crispy after taking out of the foil?
I put it back on the smoker with high smoke. I did have burnt ends. Wife and daughter were hovering while I was slicing up the brisket stealing them from my cutting board. 🙄Invalid Link Removed

Have to be licensed and inspected by the health department to do catering here. There's other things too so it's pretty much just for myself, family and friends. I skirt around it sometimes by saying the payment is a donation. 🤷🏼‍♂️

Smoked meatloaf is a rare treat. So few make that but when you have had smoked traditional oven just doesn’t even come close.
 
This is how I store my smoked meats in the freezer. I'll put some of the juices in the vacuum back so that it doesn't get dry in the freezer. It also makes the pores of the meat soak in the juices more when you vacuum seal it.

Just got off the phone with my wife and she gave me some bad news. I had sent some pulled pork, that I smoked last weekend, with her when she went to see her mom and sisters on corn harvest. Her mom stuck it in the Crock-Pot but didn't stir it. She thought it looked dry so she added water .....WATER!!... to it. Of course, when she did stir it, she realized that there was plenty of juices in it already. 🤦🏼‍♂️🤦🏼‍♂️ So then she drained some off. I told my wife to not ever let her mother mess with any of my meats again. Last time she covered it with bbq sauce. The flavor of the sauce and the dry rub did not go well together. People liked it but it definitely wasn't near as good as it was without the sauce. SMH!!
I guess the part that really pisses me off about it is that she thinks she has to doctor it up before she even tries it and she's had my smoked meats enough to know!

my moms brother [RIP] used to cover everything in a thick layer of salt before even tasting.
 
The bacon sundae was damn good. It was a sweet chocolate and every sip there was smoked salty bacon that countered the sweetness very well. Kinda like salted chocolate but with a bacon aftertaste lol

If you need her to disappear I’ll take care of it for a smoked brisket or some ribs.
 
I live in an apartment that doesn’t allow grills/smokers.

Anyone have any good advice or recipes for ribs and pork butts in a crockpot?
 
No, we actually get along pretty well. I just get rather annoyed with people messing up my meats. Lol!

Yeah I know what you mean! I raised my kids eating beef medium rare. I slow cooked a London broil on the grill for my three kids to eat while my wife and I left for the evening. My mom was babysitting for us. The next day my oldest daughter told me my mom put the slices of London broil in the microwave and overcooked them before the kids ate it. That pissed me off!! My mom eats beef well-done and then some. Totally ruins it.
 
Thanks but I was looking more for recipes and how long to cook a pork butt in a crockpot.

Like does anybody have a great rub they use for pork butts or ribs?
