Why would you want a casein before bed? XF UP 2.0 is an optimal choice not because of the casein, but because of the casein + isolate.
Blends, in nearly all situations applicable to individuals who "bodybuild", will be the superior choice.
Dymatize Elite XT is a pretty good choice IMO. It's profile includes casein, as well as egg albumen, but the "coated" protein digests even slower. And now with the improved taste it's almost like having dessert before bed.
Why do you want protein specifically before bed?
I workout in the evening after work and then eat my dinner and I want a protein that will take the place of an unhealthy dessert.

Like you said, PES is touted as being pretty well flavored (haven't personally tried it) - but also XF UP 2.0 is probably more "dessert" like given its thickness and some of the flavoring options. Agree. Other 2 good options would be USP oxyelite protein and PES Select: both have casein plus whey and are very well flavoured it appears

For me, sometimes sleep depth will be altered negatively.I don't like eating too close to bed. If I do, I'm up all night long.

Why not just have some cottage cheese? There's all of your casein there
