Question about C-Peptide test

Mine came back normal, but it was done while fasting. My blood sugar is always normal while fasting. But after eating (and after a GTT) my blood sugar drops like a rock. Does the C-Peptide only reflect insulin at the time of the test taken or is it indicitive of insulin production over time?
