oh dang you guys ever use my pancake recipe? I will need to share! I make it every weekend.
 
A yummy low carb dinner

Birds Eye - Zucchini Lentil Pasta-cheddar + 2 turkey cheddar cheese sausages = I feel like a kid again (oh and a side of ketchup)

So I made 3 8-10oz (cooked) eye of round steak.. Montreal seasoned.. and fried some baby red potatoes with onions.. seasoned with adobo + siracha ketchup.. pwo meal..

Salmon with green lipped muscles in a tomato, bell and hot pepper, onion and garlic sauce on a bed of cauliflower rice with a cheese sauce.
I need to workout a zucchini noodle version yet. A cheaper option is marinara mix over the salmon and muscles.

Zucchini is creepy... My mom is a keto diet person and makes different odd stuff with substitute things.. one time she made lasagna with zucchini and didn't tell us so we ate it and you could not tell the difference at all.. that's creepy

Cant beat garden fresh. This season I'm keen to grow Jack be Little pumpkins. Single serve roasted stuffed pumpkin.

I am a lover of zucchini. I love to shred it and put it in my pancakes or oat meal. Makes it more voluminous especially if you are cutting. it also helps keep it moist and there are some micros too!

50-60g pancake mix
20-30g snickerdoodle protein powder (@pescience)
1/2 tsp baking powder
60g pumpkin puree
100-140g shredded zucchini
Cinnamon to taste
Water to THICK batter - makes around 6-8 pancakes how big you make them

you can play with the ratios of how much you put in which is why I love this recipe sometimes if I want to keep it lower carb I do 30g of pancake mix and put more protein powder. ENJOY!

kjkitzman - 4 cups Shredded Zucchini squeeze out all the moisture. Add 2 beaten eggs, 1 cup shredded cheese of your choice and whatever spices you like. I add garlic and onion powder, salt and pepper. Mix and put in a 9x13 pan (sprayed with oil) and bake at 350 for 20 minuets. Remove and add whatever toppings you want then bake again for 20 minuets.

10-20g of vanilla protein
Little bit of water
Put in frig for 30 minutes or so (trust me)
Then add toppings

I just used some of the roasted, sliced up beef chuck I had prepped already for the week. Bought a bottle of Kung pao sauce off the shelf from the grocery store. Pre mixed stir fry veg from the produce section, just adde some bell pepper to it. And peanuts. That was it. I try to keep my cooking at home as simple and streamlined as possible(I run a foodservice operation for a living).

Cheat day today, since it’s my day off from work. I was a bit inspired by Matthersby and being that I’m upping my calls a bit, I went big to hit. Dinner wouldn’t fit on a plate, so I had to improvise. At all but the last couple bites of the ribs and the coleslaw. Was about to throw up.
