Recipe

Dry:

34g Cor Performance Whey (S’mores)
40g Oatmeal (MyOatmeal.com PB Oatmeal Raisin Flavor)
40g Complete Pancake Mix (Extra Fluffy)
8g SF/FF Pudding Mix (Vanilla)
12g PB Lean (PB Flavor)
3g Splenda
3g Baking Powder

Wet:

2 Egg Whites or 70g Egg Beaters
2 Tbsp of 50g Greek Yogurt
Touch of water for batter consistency

Topping/Filling:

20g Peanut Butter Reese Chocolate Chips


Directions

Pre-Heat oven to 350 degrees

In a large mixing bowl combine Whey Protein, Complete Pancake Mix, Baking Powder, Splenda, SF/FF Pudding Mix, PB Lean, and Oatmeal (or you can grind it up into a powder and add it this way)

Add in the Egg Whites/Egg Beaters + Greek Yogurt + Water and then mix with a spoon to a very thick consistency that should stick to your spoon.
Line a Cookie Sheet or Baking Pan with Aluminum Foil and spray with cooking spray

Evenly disperse a small portion onto the sheet and keep the portions at least 1” apart. The reason being is they will expand while cooking and you do not want them to overlap.

Cook for 8-9 Minutes and pull out of oven. Allow cooling for at least 5 minutes on a cooling rack.

Hey Bob, I can't stand Greek yogurt, or pretty much any yogurt except frozen yogurt...is there any ingredient(s) I can sub in your recipes that would do the trick?

You wont even taste it TBH in baking recipes
You could do applesauce (as i state in the videos) or small bits of oil.
 
Maybe even replace with cottage cheese if you like that better? I did it the other day when I ran out of GY, didn't even notice it. Just blend it first.

I have a challenge for you guys. Someone come up with a 'helthified' flan recipe. I make a lot of it to use up old egg yolks but I like it so much I always over-indulge :17:
 
Texture was fine, or rather as good as it's going to get without sugar and fat. Real flan is 100% liquids. Problem was the flavor, basically tasted like egg whites.

Probably would be better with a flavour other than vanilla, or by adding cinnamon/cocoa

That's what I thought, cocoa would be spot on, but then it would lose the point of being flan, might as well make cheesecake which likely be tastier and easier.
 
Add PB LEAN, would help a ton

Recipe

Dry:
14g Big Train Low-Carb Baking Mix
34g Cor Performance Whey (Chocolate Raspberry Truffle)
8g SF/FF Pudding Mix
3g Splenda
3g Baking Powder

Wet:
1 Egg
50g Greek Yogurt (2 TBSP)
¼ Cup Water to batter like consistency.


Directions

You will take all Dry ingredients and mix them in a bowl (Whey, Baking Mix (Low-Carb), Baking Powder, Splenda, SF/FF Pudding Mix)

Then add in your Greek Yogurt, Egg and water to a cake like consistency is made and mix with a spoon until evenly dispersed.

Take a small Tupperware container that is circular and spray with cooking spray, make sure the outside is coated evenly. Then drop in your batter and even out before tossing in the microwave.

Microwave for 3-3.5 minutes on a medium power to prevent overcooking and drying out the final product.

Touch up the outside edges with a fork and transfer to a plate by turning it over and allow it to cool for a minute or store in the fridge overnight for a morning snack
