Baked Oatmeal

My Mom sent me this recipe. I haven't tried it yet, but she said its amazing. She also adds ground flax and protein powder as well. Almonds are also a great addition.

Baked Oatmeal
Use a 9 x 9 pan ( you can buy some throw away aluminum or a glass dish) spray with Pam

3/4 c. Splenda
1/2 c. Oil ( can substitute same amount of applesauce)
2 eggs or 8 Egg Whites
1 C. milk
1/2 teaspoon salt
1 tablespoon baking POWDER
3 C. Oatmeal
2 Apples cut into small pieces (or two bananas, or any fruit: be creative I
have heard of a banana split with pineapple, coconut,cherries & bananas)
Topping
2 Tablespoon Brown Sugar (optional)
1/2 Teaspoon cinnamon (optional)
Mix all dry ingredients except topping. Add the oil, milk and eggs and fruit.
Pour into pan Sprinkle topping and bake at 350 degrees for 30 minutes.
Cool, cut square slice and eatjust like that or cut slice add milk and put in
microwave for 30 seconds. Enjoy as a breakfast or a snack cake.
 
This sounds great dude, I'm gonna give it a try. But don't you mean 2 eggs or 4 egg whites? 8 whites would give you the consistency of 4 whole eggs.
 
Post the macros of that without the fruit, so that can go in the cookbook. That sounds yummy.
 
On my batch I added 1/4c of almonds, 1tbs of ground flax, 2scoops of protein powder, 4 egg whites, and applesauce instead of oil. I cut it into 6 pieces. The TOTAL macros are as follows:

KCAL: 1552 Protein: 103.5g Carbs: 206g (Fiber: 32g) Fat: 38.25g (Polyunsat:9.5g Monounsat 16g)

Per Slice: KCAL:259 Protein:17.25g Carbs: 34.39g (Fiber:5.33g) Fat:6.38g (Polyunsat:1.58g Monounsat:2.67)
