My Mom sent me this recipe. I haven't tried it yet, but she said its amazing. She also adds ground flax and protein powder as well. Almonds are also a great addition.
Baked Oatmeal
Use a 9 x 9 pan ( you can buy some throw away aluminum or a glass dish) spray with Pam
3/4 c. Splenda
1/2 c. Oil ( can substitute same amount of applesauce)
2 eggs or 8 Egg Whites
1 C. milk
1/2 teaspoon salt
1 tablespoon baking POWDER
3 C. Oatmeal
2 Apples cut into small pieces (or two bananas, or any fruit: be creative I
have heard of a banana split with pineapple, coconut,cherries & bananas)
Topping
2 Tablespoon Brown Sugar (optional)
1/2 Teaspoon cinnamon (optional)
Mix all dry ingredients except topping. Add the oil, milk and eggs and fruit.
Pour into pan Sprinkle topping and bake at 350 degrees for 30 minutes.
Cool, cut square slice and eatjust like that or cut slice add milk and put in
microwave for 30 seconds. Enjoy as a breakfast or a snack cake.
