    Its sour fresh, I just have never recognized a "vinegar" like taste to it. I'm sure if you're getting it from companies like SNS it's the real deal and pretty fresh. I wasn't saying ti shouldn't be sour/bitter, but when it gets a vinegar-like or sour fish like taste, that stuff is OLD.

    that sourness is usually a sign of older raw materials. when its very fresh it shouldn't have too much flavor. bitter but nothing insane.

    you cant tell if its legit without having an HPLC handy. its melting point is 145 celsius, so you could in theory at least see if its anywhere CLOSE to the real thing by starting there. but highly unlikely itll tell you much
