It really hurts me mentally to take days off, i absolutely love being in the gym. Regardless of whether im on or off, i always need at least one full day of absolutely no lifting or cardio, 2 is better. Some weeks i can only handle 4 days of lifting when i progressively dig myself into an overtraining hole, which is a lot harder to do when im on. I think no matter what though, 5 days of solid workouts with 2 full consecutive days off is the best balance for me.
Technically if you lowered your volume enough and programmed your split in a certain way along with manipulating other variables, you could probably get away with never taking a single rest day. Idk im just speculating and theorizing lol
