Cooking with whey

Finally got it. Making ice cream with it tonight. Just licking the lid it's friggin AMAZING. The powder is slightly fruity with a very sweet vanilla base, and TONS of marshmallow bitsInvalid Link Removed

Potential new top 3-5 candidate here.

And sick macros at only 120kcals and 23g protein

Look at those marshmallow though!
Must try with actual lucky charms lol

Just picked up a cuisinart ice cream maker from Bed Bath and Beyond for $50. I followed Solutions' recipe except I used whole milk instead of almond milk. I'm not worried about calories at the moment. I used a vanilla cream blended protein with about 10% micellar casein and the rest was a mix of MPI/EGG WHITE/WPC.

1 1/2 scoops blended whey
1 1/2 cups whole milk

It actually made quite a bit, prob 3 - 3 1/2 cups worth. Wasn't sure how the consistency would be compared to real ice cream but it was pretty much exactly the same. I could taste the "powdery/grittiness" of the micellar casein a bit but it didn't stop me from devouring the bowl in a few minutes. Keep that in mind though, if you use a powder with casein in it you may taste it a bit. It also passed the "kids" test so it's pretty good. I find myself wanting sweets first thing in the morning so this might be the "Solution" lol pun intended. If your on the fence about coughing up some dough to get one of these little machines, I say go for it. Just think, the rest of your family can also enjoy a healthier option when it's time for desert too. And I'm sure the machine will pay for itself if your family eats a lot of ice cream. The amount of ice cream you get from this is pretty cheap compared to what you would get from store bought stuff. Overall very happy with my purchase and the recipe. Looking forward to making up some of these other delicious recipes.
Edit post: After I looked at the protein powder I used for this recipe, I found out it had closer to 30% casein in it so that's probably why I tasted the casein in it. I would guess that as long as it's 15% or less casein you probably won't taste it like I did.

Great first experience with an ice cream recipe sounds like.

What are you thinking of next?

Well, I looked at your Instagram the other day and saw you had some cinnamon rolls posted so I'd love to try those out but you didn't have the recipe up yet so until then probably some cinnamon swirl pancakes/waffles tomorrow for breakfast.

Yes sorry i went on a mini hiatus there I need to redo a few recipes and post them up

Ya thats ok man, wasn't trying to pressure you. I saw you hit a rough patch of some sort that slowed you down a bit. They look damn good, can't wait to try them. Cinnamon rolls are probably my favorite breakfast food.

I have a few cinnamon roll recipes on my youtube if you want to check them out

^ could make that one but cut it into smaller rolls

Thanks bob, that first one looks pretty good,I'll have to try it. I have some pb lean I ordered on the way, I'm gonna make some vanilla icing with it and put some on the cinnamon rolls. Yum.

Anybody try "mancakes" brand before? It's high protein pancake mix, saw it on amazon. It's super expensive though. 24oz bag of mix is like $25. They also make syrup that's $20 for a 16oz bottle.

Imo its better to do your own in terms of taste, and I can prepare them any flavour with added protein

I tried them at the Arnold already made and got a sample bag as well that I have not used yet. But I agree with above comments, the price is not justified.

Yeah, I know making it myself will be much cheaper. I was just curious on the taste of the mancakes. At that price I would expect them to be stellar, but I guess a higher price does not always mean better. Pancake mix is pretty much just flour and some baking powder/soda isn't it?

Unless your adding some great flavouring to the mix or syrup on top ... meh

Well I know there's other stuff in there, especially store bought, but the bulk of the dry ingredients is flour and baking soda/powder. Throw in some buttermilk powder if you want buttermilk pancakes. The rest of it can be left out in my opinion.

For some yes, but that would not make the greatest pancake just using flour and baking powder for dry ingredients.

What would you suggest as a minimum of ingredients for basic dry pancake mix? I would be adding protein powder to it for sweetness and flavor.

You would need to add a sweetner (protein powder will dry out the final product to a degree) Sugar or splenda or stevia
Of course you could add protein powder for flavor
Cinnamon or Cocoa Powder (Flavor) , cocoa is on the thick side as well
Pb2 or PB Lean (PB Flavoring) and thicker texture
SF / FF Pudding mix (helps with binding , texture, and moisture)

Pretty sure I can come up with something with fewer ingredients than store bought and taste just as good.

Flour of choice, salt, cinnamon and possibly sugar is all you need for a pancake base. Then just add yogurt, pumpkin, beans, applesauce, etc for moistness.

Blueberry cheesecake kodiakcakes with chunks of nobake USPlabs modern cheesecake and fresh blueberries =D

The pancakes are just Kodiakcakes with Blueberry purée and the cheesecake is pretty simple

16 oz FF cream cheese
1 scoop of modern
1 packet of knox gelatin
6 oz of water
Sweetener to taste

Base
Golden grahams in a food processor
Enough syrup to bind cereal

-Begin by preparing the bottom of a springform pan with parchment paper to prevent sticking.
-spoon graham mixture into the springform and evenly flatten it out using the back of a spoon across the entire bottom of the pan
-set pan aside

-In a mixing bowl combine all filling ingredients except for the water and gelatin.
-In a separate pot, bring water to a boil and ensure the gelatin dissolves thoroughly.
-Allow the gelatin mixture to cool slightly and begin mixing into the bowl
-Once gelatin mixture is at or around room temp, begin to mix all ingredients in the large mixing bowl with the gelatin mixture either by hand or with an electric mixer.
-Pour batter into the spring form pan and place in the fridge for filling to set (approx 3-4 hrs)

TheSolution-

Hey solution, if I wanted to up the protein in one of your recipes, what would I need to do? Can I just add more protein and then cut back on the flour or pancake mix? Any suggestions on how to modify the recipes to up the protein content? I understand the recipe will come out different flavor wise. I'm willing to sacrifice flavor a bit to get the protein higher if possible.

eat some protein on the side (Chicken/Beef)
adding more dry may dry the final product out
You could try adding yogurt, applesauce, milk, or a touch more of a banana , but honestly most of my recipes have around 50g of protein which is giving you adequate leucine at a meal to maximize MPS

or make a sludge frosting (Yogurt + Whey) which would go great on pancakes, waffles, muffins, breads etc.

Plain Greek yogurt + Select (any flavor) + ice cubes + unsweetened cashew milk or milk + xanthan gum = volume for days!!!

Blend all the above and add whatever syrups or whatever else you want and enjoy.

Or just make a double batch of pancakes Invalid Link Removed

Have yet to see you post some waffles :)

I'll get some up on my refeed, whenever that is.

Even though my carbs are still quite high, calories are low. I don't want to combine protein + carbs into a mixture, as in, Kodiak cakes have a good amount of protein in each serving, and if I wanted to get 2-3 servings, thats 14-21 grams of protein, where I could be getting that from a protein source on its own, for extra volume.

How long you been dieting? What your kcals at? Round 2000?

2300. I got a new job where I am on my feet from 4am-12-2pm.

Been dieting for roughly 8-9 weeks.

morning jobs FTW, come home, grab a meal, smash some weights, and then eat some waffles before bed = winning.
Plan to go maybe 14-16 weeks? Or playing by mirror?

Yeah. I'm constantly moving during the day and then get home and eat a pre-workout meal, hit the gym an hour later, then come home and eat post workout and then one more meal. 4 meals a day for me is best.

Competition November 14th I'm targeting.
