How would I go about figuring out the right amount of whey, dextrose, and creatine to consume pre and post? Is it best to consume only pre and post, and stay away from on days off of weight or resistance training? Would it be beneficial pre and post for HIIT?

the only time in a study there was any evidence of whey + carbs immediately postworkout providing any benefit over just eating regular meals was a study where the workout was done first thing in the morning before eating anything. Creatine is handy to just take daily, its simpler that way I think
 
There isn't any good proof that it is. Taking it simply, beef takes 4+ hours to digest. So if you had a Burger 2 hours before workout, and your workout is an hour, you still have high levels of amino acids for at least an hour post workout

Thanks for taking the time to answer my questions!

I guess a good step for me would be to look up this info on the protein I consume and plan my daily diet and workout accordingly.

I have never had trouble with results, until my body went out of balance. It has been pretty demoralizing eating right and working out only to see fat accumulate around my lower belly and back. I won't say it is a waiting game, because I have only become more disciplined with my diet and switched up my routine and mindset.

Getting info here and locally from people who have the experience and knowledge, and knowing once my body recovers from the damage the chronic stress caused, I will see results and be moving in the direction I want go.
