Recommendations on cooking science books?

Hey guys.

I've been cooking in a restaurant over a year and really gained a passion for cooking. My mind tends to work really logically and likes reasons why things are done certain ways. Ive noticed several cooking tricks with scientific principles so that my cooking has improved and customers have requested I cook because they can tell the difference between me and other cooks. The recipe is the same, just the technique different.

So, that said, does anyone know of books (nor necessarily cookbooks with recipes) that explain different techniques/hacks that explain the how's and whys such of such things so I can further experiment?
