Pumpkin Dream Cake with Cinnamon Maple Cream Cheese Frosting
Yield: 3 layer cake
ingredients:
3 cups all-purpose flour
1 1/2 teaspoons baking soda
1/2 teaspoon salt
3/4 cup unsalted butter, softened
2 cups granulated sugar
3 large eggs
1 tablespoon vanilla extract
1 (15 oz) can pumpkin
1/4 cup vegetable oil
1 cup milk

12 oz (1 1/2 packages) cream cheese, softened
3/4 cup unsalted butter, softened
3 tablespoons pure maple syrup
2 teaspoons vanilla extract
2 teaspoons cinnamon
6 cups powdered sugar

directions:
Preheat oven to 300°F. Grease 3, 8-inch round cake pans. Set aside.

In a medium bowl, mix flour, baking soda and salt. Set aside.

In a large bowl/stand mixer, cream butter and sugar until light and fluffy. Beat in the eggs one at a time, then stir in vanilla, pumpkin and vegetable oil. Beat in the flour mixture alternately with the milk.

Divide batter evenly into prepared pans. Bake for 35-40 minutes, or until a toothpick inserted into the center of the cake comes out clean. Remove pans from oven and immediately place in freezer for 45 minutes. (This keeps the cake moist by immediately stopping the baking so the cake does not continue to bake when you remove it form the oven.)

For the frosting: In a large bowl, cream butter and cream cheese until smooth. Beat in maple syrup, vanilla and cinnamon. Add confectioners' sugar and beat on low speed until combined, then on high until frosting is smooth.

Assemble the 3 layers with a thick layer of frosting in between each layer. Then apply a thin crumb coat on the top and sides. Pop back in the freezer to harden the crumb coat for about 10 minutes.

Apply one final thick and even layer around the outside of the cake. Store in the fridge until ready to serve.

Wife got this off pintrest or what ever its called and let me tell you I gave her some icing on her dream cake after this :p haha

Thats why i eat a pint a week with my cheat meal :)
If I tried eating a pint next thing I know I'd be at the local supper market buying a gallon and eating it on my way home haha ice cream is my weakness too especially cookies and cream

Me too! One pint of ice cream has me off the rails. Next thing I know, I'm hanging around ice cream shops early in the morning waiting for them to open up. :(

I hear you. I'm a foodie man. People ask me all the time why I perform so much cardio, 100% honest answer...I LOVE FOOD. Lol.

Snow squalls by me right now too, another 30cm by morning. Shovel is ready, keeping on top of this is a full time job when you're helping out your elderly neighbours as well

10g PB2 (Extra PB Flavoring)


Wet:
1 Egg White (Stiffened/Folded into mix)
1 Whole Egg
50g Greek Yogurt
75g Libbys Pumpkin


Directions

Pre-Heat Oven to 350

Combine all Dry 
Then add in the Pumpkin + Greek Yogurt + Whole Egg to the dry mix, and then 
in a separate bowl, mix the egg whites by itself to a stiff peak (around 2-3 minutes) and SLOWLY fold into the mixture.

This will help with moisture and overall texture and cook in the oven with sprayed down mini-loaf pans or one larger loaf pan. Make sure you do not fill past the half waypoint or it may cook over. Be cautious regarding this.

Cook for 15-18 minutes and monitor them. Use a toothpick to pick the center to make sure no residue comes off showing you that the final product is complete.

Allow 2-3 minutes to cool and then enjoy!

Same here....in fact I really need to stop ordering out so much lol.

When the gf isn't home my go to meal is protein shakes, almonds and the odd time I'll make a burger aha. But I do want to try one of these recipes.

If you guys are going to try these, mix all the ingredients in a bowl with a whisk then dump the pudding in a zip lock freezer bag. Seal it, cut one of the bottom corners off and squeeze the pudding into the plastic shot cups that you have laid out. This is the best for less mess. The trick since there is quite a bit of booze in these is that you have to keep them in the freeze otherwise they'll melt. If your taking them somewhere I would definitely take them on ice.
