Ingridients:
2/3c Flour
2/3c Milk (of choice) I used 1%
1 Tbsp Stevia or sweetener of choice
2 Whole Eggs
2 Egg whites
1 scoop cellucor cinnamon swirl
Fruit (of choice) *follow step 1 for apples since they need to be cooked first otherwise skip to step 6
9" pie plate or other round rimmed baking pan
1. Preheat oven to 350
2. coat dish with cooking spray
3. if using apples- thinly slice and add to pie dish (Sprinkle with raisins, cinnamon and brown sugar if you wish) and spray once more to coat fruit
4. bake for 15 minutes or until apples are soft
5. meanwhile mix remaining ingredients.
6. once apples are cooked remove plate and crank oven to 450, once heated add batter and cook for 15-20 minutes or golden brown. (if starting from this step make sure to add the pan while the oven heats to warm it up, once preheated take out and spray then add batter)
7. Invert onto a plate and top with whatever you have in mind.
*note this is more of a custard style rather a pancake so expect somewhat of an eggy texture.
I tried this recipe with bananas and topped with walden farms caramel but it wasn't as good. The combination of apples, cinnamon, raisins and maple syrup were perfect. Here's what it looked like before ice cream, syrup and whipped cream Invalid Link Removed
