texture difference between ATW and ONs/Dymatize

Hey, just got 5lbs of cinna bun and cupcake batter, both excellent btw, just wondering why the texture is different between ATW and say ON's whey and Dymatize. I know Dymatize and ATW both list WPC and then WPI but ATW seems to be a little more clumpy or cake like. I notice this mostly when using the scoop. Thanks
 
The thicker texture is because of the xanthan gum added to it; I agree, I don't like that either. Why it mixes so terribly, I don't know, but at least it tastes good.
 
Mixes awesome for me - but I am a snob when it comes to protein shakes - I can only drink protein shakes mixed in a blender with ice, otherwise, I'm not enjoying it. 2 scoops of ATW MRP, 8-12 oz water, and 8 ice cubes. Best ever!
