Probably just over thinking this, but I am on Holidays ATM, was planning on doing a cycle when I get back, Holidaying for about 3 weeks, do you guys start your new cycle straight away when you get back or do you get back into routine for 1-2 weeks before starting?

True, but I am more so talking about training wise, is it better to get back into the routine of training first then cycling or do people think it's fine to just jump straight in... So really I'm talking about training

Take advantage of the couple weeks of reacclimation. I would milk that even longer personally, a full 3-6 week training block. Training, natural or otherwise, remains a marathon.
