However, taking out malto and a little bit of fructose would probably effect flavor.... maybe Trehalose?

That would make it the best on the market and you could charge more.

actually the final of UP 2.0 will have a couple tweaks from the beta, one being the addition of rice oligo, the other being the protein blend changed to have micellar and WPI only (no WPC).

as for the malto, it is actually for texture, there is only a very small amount per serving though
