For the 10 sets of 10 should I use a weight that I'm able to perform 20 reps with 15 reps? I've heard both
 
IMO it depends on your work capacity. at first, start off light. go for what you can do 20 times. increase the weight in 5-10lbs increments each time to fine tune it.
