I put them straight into ice water from the pot and let them cool off for 10-15 minutes. When I peel them, I crack the tip of the blunt end, seems like there's always a hollow area under the shell there. I also try to keep the shell together some as I peel it, and try not to use my fingernails. Finesse the shell and membrane off the egg, if that makes sense at all!

that is right about the hollow spot under the blunt end of the egg..
check out the picture here of a raw egg

do you put the eggs in to the boiling water or do you bring the water to a boil with the eggs in the pan and also how long do ya boil?????

thanks again

I bring the water to a boil with the eggs in it. Normally a 15 minute boil but going to 20 makes things a breeze. Then take the pot to the sink, rinse briefly in icey water until they are cooled enough to handle. Tap on a counter, at the blunt end, like intv and then just brush off the shells. Normally they'll come off as one or two large chunks just by pressing against it, and rubbing the shell off, not picking at it.

I put a shitload of salt in the water, then bring the water to a boil with the eggs in there. Cook about 15 minutes, then I immediately run them under cold water. This combo works very well & the shells peel away easily in large pieces. I cook up to 36 at at a time this way.

you can try this too...poke a hole in the egg with a pin (this will stop the yolk from being green if anyone ever gets that)

also if you bring the water to a boil with the eggs in it, then turn it off about a minute after it boils then let them sit..this will prevent it from over cooking..let em sit in the hot water (covered) for like 10 minutes

also note that the freshness of the eggs has a lot to do with whether the shell sticks or not..

i was going nuts with this question. i think it was goodegg.com? stated that if eggs are super fresh, the shell membrane does stick. they need to be like at least a week old.

Hamper, if the yolk turns green - it means that you over cooked it.

yeah you are right...but by poking a hole in them you allow the gasses that cause the reaction to escape..so there is less of a chance of green yolk if overcooked...

funny how hard it is to boil eggs..lol

it won't leak..I mean you are only using a pin..a regular one...not an 18 guage or anything...just a regular sowing needle and your good...its basically enough for the gas to come out..maybe some of the membrane that is like stuck to the inner shell but nothing major...all 7 grams or so of protein will be there..

Has anyone bought that accordian looking thingie off the infomercial for peeling hard boiled eggs? It looks like a total POS, but am interested in knowing if anybody bit the bullet and bought it.
