Low Carb Taco Salad

Ok, I tried a new recipe today and it was fantastic. You will need:

Taco Seasoning - Look for low carb, but most are low carb
96/4 Lean Ground Beef - I use Laura's
Low Fat Sour Cream
Lettuce - I use Romaine
Low Fat Cheese - Just used a sprinkle
Salsa - any should do - watch sugar/carbs
El Yucateco habenero Sauce - As much as you want

I brown my Lean Beef until done, then drain the fat. I put hot water(from tap) back into the skillet with the beef, then heat it up again( i usually don't wait for a boil, but just get the water hot). I then drain the beef again. I do this until the water is basically clear, about 5-6 times.

Next I add 1/4 cup of water and the taco seasoning. Cook the water out of the beef/seasoning.

Now for the fun part. Put some beef (I use 1/2 cup) in a bowl. Add a sprinkle of cheese and let it start to melt. Throw as much Romaine on there as you want, then top with 4-5 tbsp. of salsa. Put a dollop of Sour Cream (I use between 1 and 2 tablespoons) and top with as much Habenero (I use both the green and red) as you can stand. Those who arent Spice maniacs can leave out this step.

Hope you all enjoy this as much as I did. I literally felt like I was cheating when I was eating it today, so much so that I had to keep going over the nutrition facts in my head! I am OCD a lil' though!

omg...i had this on monday night and loved it! i wanted to keep eating and eating...i added alot of lettuce to get that crunch...

haha, Ive been trying different salsa's. Salsa verde, the triple pepper salsa from pace(I think) its a dark red and pretty hot salsa. Its delicious. I also got some pico de gallo. I eat lots of lettuce as well, it fills you up with virtually no cals. I get the weight watchers cheese, which is basically a reduced fat cheese. It adds some cals, but I keep the amount to about a fourth of a cup, so Im still in my cal requirements.
