It is AMAZING, for what it is anyway, and especially for how gosh darn healthy it is.
Ingredients -
3.5 cups stone ground whole wheat flour
1.5 cups water
1.5 oz. active dry yeast
1 tbsp olive oil
1 pinch of salt
15 oz. can of organic pizza sauce (go for whatever has the lowest amount of sugar/carbs, made w/ EVOO preferably)
8 cups (2 bags) of shredded reduced fat mozzarella cheese
1.5 cups shredded parmesan cheese
2 lbs of ground turkey (99/1)
1 tbsp crushed red pepper (if you want to spice up your pizza sauce)

IMPORTANT: This only applies if you followed the instructions as far as amounts and separation go!!!

Preparation -
Dough -
- In a small bowl, sprinkle the yeast on the warm water, and stir to dissolve it. Set aside until the yeast starts forming bubbles in about 5 minutes.
- Pour the flour into a large bowl or on a work surface. Mold the flour in a mound shape with a hole in the center.
- Pour the yeast mix in the center of the mound and add the 1 tbsp of olive oil, and a pinch of salt.
- Using a spatula draw the ingredients together.
- Then mix with your hands to form a dough.
- Sprinkle some flour on the work surface. Place the dough on the floured surface.
- Knead the dough briefly with your hands pushing and folding. Knead just long enough for the dough to take in a little more flour, and until it no longer sticking to your hands.
- With your hand, spread a little olive oil inside a bowl.
- Transfer the dough into the bowl.
- On the top of the dough, make two incisions that cross, and spread with a very small amount of olive oil. This last step will prevent the surface of the dough from breaking too much while rising.
- Cover the bowl with a kitchen cloth, and set the bowl aside for approximately 1½ – 2 hours until the dough doubles in volume. The time required for rising will depend on the strength of the yeast and the temperature of the room.
- When the dough is double its original size, punch it down to eliminate the air bubbles.
- On a lightly floured work surface, cut the dough into three equal pieces.
- Using a rolling pin, or your hands, shape one piece of dough into a thin round layer. Make a pizza about 12 inches in diameter.
- Throw in the oven for 5 mins at 450 to help ensure the dough stays crispy.
- This will make 3 crusts, yielding 8 slices each.
Sauce and Toppings -
After crisping the crust in the oven...
- Add .5 cup of water to the sauce.
- Separate the sauce into 3 bowls of the same size.
- Empty the cheeses into one large bowl, mix them together, and then separate into 3 bowls of the same size.
- Cook the ground turkey in a pan, and separate into 3 bowls of the same size.
- Add the sauce to your crusts (1 bowl per crust).
- Add the turkey to your crusts (1 bowl per crust).
- Add the cheese mix to your crusts (1 bowl per crust).
- Bake at 450 for 25 mins in a regular oven.
- Cut each pizza into 8 equal slices.
