Ingredients
2 cans black beans
2 cans whole kernel corn
1 avocado
1/4-1/2 tomato
Thick slice of white onion
Handfull of cilantro
1 lime
Salt to taste
Whole Wheat Pita.
preparation
Empty cans of beans and corn into strainer. Wash off excess juice. Put washed beans/corn into large bowl.
Dice up tomato,onion and cilantro. Adding or subtracting based on how much you want to put in.
Dice up avocado.
Add diced ingredients to bowl of beans/corn and squeeze lime over everything. Add some salt, stir it up and your ready to rock and roll.
Cut the whole wheat pita in half, so you have two sides, not two pockets, throw each half in toaster, and you have instant healthy chips for dipping
I got this recipe from my girlfriends sister, she married into a hispanic family and for the most part they make all of their own food, very few things they eat are purely store bought.
I added the whole wheat pita, and it works great. I dont eat chips so i found out a long time ago that pita is healthy, and tastes great.
