Most definately, all my carbs are veggies except when I eat oats

ive done strictly veggie and meat diets and i always loose fat and somehow retain most of muscle(not all of it ut most of it) and i feel so good on veggie diets like im invincible, it really makes me feel great all health problems disappear even my asthma and im very prone to colds and flu and veggies do the trick for me.

IMO veggies are more powerfull than what people think, and people dont semm to realize it
 
I do cardio twice a day, in the morning on an empty stomach and after my weights in the afternoon, I have been told that is a good cardio schedule, I do moderate interval training because I wanna be careful with the knee....

If you are still 300lbs like your profile says then this is probably more cardio than is necessary at present time. Make the energy deficit via diet.
