but what if one doesn't currently have hypo thyroid or adrenals but goes on 300mg test ew. could he still develop these issues? and do they kill your dick on high t doses even when sex hormones are perfect?

When body is pushed passed its natural limits other areas such as thyroid or adrenals may be effected.
I have seen TRT induce hypothyroidism and adrenal issues by increasing TSH and lower ACTH in some cases.
