I saw it mentioned on the cottage cheese thread so I had to post this recipe. Here it is:
1 lb 97% fat free ground beef
1 12 oz can diced tomatoes
1/2 c water
1 clove garlic
2 tsp dried whole Italian herb seasoning
1 8 oz package whole wheat lasagna noodles
1 10 oz package frozen spinach
1 c fat free cottage cheese
2 tbsp Parmesan cheese
1 tbsp dried parsley
1 tbsp dried oregano
cooking spray
1 c part skin mozz cheese
Brown the beef in a skillet and drain it. Return meat to the skillet, stir in tomatoes, water, garlic, and Italian seasoning. Cover and bring to a boil. reduce heat and simmer 20 mins. Cook noodles according to package directions and drain. Cook spinach according to package directions and drain all the water from it. Combine spinach with cottage cheese, parm., parsley, and oregano. Set mixture aside. Place half of the cooked noodles in a 12X8X2 inch baking pan sprayed with cooking spray. Top with half of the cottage cheese mixture, then with half of the meat mixture. Cover with half of the mozz. Repeat to create layers. Bake at 350 for 30 mins. Divide into 12 portions.
Each portion = 190 cal
fat = 6g
carbs = 16g
protein = 16g
This does well in the fridge. I make it on the weekend and then have it to take with me during the week to work, etc.
