Chicken caserole of sorts..

My wife made this the other day. It's cheap, healthy, and makes a ton.

Ingredients: Chicken, brown rice, bag of frozen mixed veggies, FF cheese, FF sourcream, skim milk, garlic, pepper, spices.

Pretty easy to make

1. bake or grill (best in crock put) chicken, then shred it
2. boil rice
3. cook veggies
4. mix all together in large sauce pan
5. Stir in cheese, sour cream, skil milk, and spices.
6. Cook over medium heat for 15-20 minutes.

You can probably remove either the sour cream or cheese. They are just used to thicken up the dish.

I usually get like 15 or so servings out of this. Cost is around 8 bucks for all ingredients. I like to add tobasco sauce as well....

I eat a lot of meals that include chicken, rice, and veggies. This meal tastes great and makes eating easier...

how much cheese,sour cream and milk did you use? Sounds great. looking forward to the wife putting it together. thanks
 
To be honest, I'm not exactly sure how much cheese and sour cream my wife added.

Looked to be about a 1/2 to a cup of each. It really depends on how thick you want it. Start with 1/2 cup of each, and if the thickness isn't too your liking, add more...
