Bison/Buffalo

I've recently started trying to add in more of this and less beef. The steaks are dryyyyy though. Anyone have a good recipe for bison steaks to keep them juicy?
 
take your ground buffalo, make it into a ball, then as you would for a lump of mashed potatoes and gravy, use a spoon or your thumb and create a valley in the meat, fill it with 1 or more tbsp olive oil and just work it into the meat. I do this with ground turkey sometimes, it makes a huge difference
 
I always marinate elk for the same reason. I always tenderize and soak with an olive oil based marinade on top with the bottom of the meat sitting in wine or beer.
 
Hmmm we have a buffalo cook book here I'll have to see if i can still find it. If not next time we go to the buffalo farm I'll get another.
 
I've seen it in various grocery stores. You can probably find it frozen if they don't have it in the meat department.
 
I saw it in Krogers yesterday in the ground beef section. The biggest thing with buffalo is not to overcook it.
 
Theres a place i pass by on my way to work that actually raises and slaughters buffalo themselves. Thats where i get mine.
 
Buffulo Burgers are great. I used to work at a trucking terminal and one of the guys that owned a (sub hauling) trucking company would bring in ground buffalo from South Dakota where his company was based and we'd have BBQ's at the terminal.

On another completely different note if anyone has a Whole Foods Market Invalid Link Removed near them you need to try Dry Aged Beef. It's how meat used to be aged and has a very good flavor alot better then standard store bought beef. Invalid Link Removed
 
buffalo steak and stew is so good. i love wild game, whether its meat or poultry. cooking buffalo make sure to cook it slow at a lower temp and prepare it rare to medium rare.
