So if red muscle is more prominent in endurance athletes and white is more prominent in power/sprinting athletes. And if white uses mostly glucose and red uses mostly fat, then why does high intensity work so much better for fat burning?

HIIT burns more calories per minute. Steady state may use more fat for energy during training, but the total energy required is lower. There is also a metabolic effect from HIIT that last serval hours after training. This has been said to be of greater consequence than the actual calories burned during the cardio session.
