Red wine has a ph between 3-4 which erodes enamel because of the acidity. Biofilm and plaque start forming by microbes metabolizing fermentable sugars. Alcohol accelerates this process with carbs that are already residing in the mouth. Sure polyphenols may be good, but this study was done in a test tube. How hard could it be to do a before and after test of plaque and biofilm accumulation in human subjects after drinking wine?
