I keep seeing this but doubt its validity. Want studies.
 
I had read about the cook then refrigerate in various paleo circles many times before to reduce digestible starch. It was particularly noted with potatoes, but I do not see why starch would not respond the same in other foods. I am unsure what the coconut oil has to do with anything though...that just seems to be ADDING calories...

Its explained there what coconut oil does.

*the oil enters the starch granules during cooking, changing its architecture so that it becomes resistant to the action of digestive enzymes. This means that fewer calories ultimately get absorbed into the body. "The cooling is essential because amylose, the soluble part of the starch, leaves the granules during gelatinization," "Cooling for 12 hours will lead to formation of hydrogen bonds between the amylose molecules outside the rice grains which also turns it into a resistant starch." Reheating the rice for consumption, he notes, does not affect the RS levels.*

Basicly oil changes starch granules structure / architecture. Not to go too spesific but this is going onto chemistry. Something to do with changing molecyles in it hence changing architecture of starch granules. Not to mention you need to cool it down for atleast of 12hours.

Cooling down rice and re-heating it isnt good for your health tho.. Or so many studies say. Re-heating rice isnt so good. increases bacteria or something. Rice had naturally some bacteria that isnt good and it starts to live after that process or something.. idk. google it up. I dont care about stuff like that :D

Still needs more research and studies...
 
Seems like a lot of effort just to eat rice (cooling for 12 hours). How about just workout harder or watch your rice intake?
 
For thousands of years, humans were trying out every single trick to squeeze a few extra calories out of what they eat. Now we're so fat that we're jumping through hoops just to shave off a few calories without actually developing discipline or self-awareness.

That right there says so much about 21st century human society.
