One glaring error is that insulin isn't the appetite hormone, it's part of the storage/release tandem, glucagon being the other half.
Leptin and Grehlin are the two that control appetite. Triggers include stomach expansion/contraction, "learned" timing intervals, etc.
I do agree with the bottom line that carbohydrates get demonized far more than they should, but battling broscience with broscience is a losing proposition.
