Fried stuff tends to have medium carbs and fat, that is reason enough to avoid it in my eyes.

I would advise to use the other arm, according to some studies you can slow down muscle loss by up to 80% in your injured arm by training the other one.
You can focus mainly on abs, neck, possibly grip and legs but I would defenitely train the good arm and shoulder with dumbells.

I don't think there would be any reason to rely on protein powders, I only take them because of my diet (high protein medium fat no carbs) before that I only eat whole foods, lots of meat and dairy.
