Weekly Meal Prepping for Optimum Freshness

Hey all, last weekend I got very ambitious and did meal prep for entire week. I was forced to prep on Saturday for my work week starting M-F. I prepped the following up:

2% F-A-G-E Greek Yogurt (3/4 cup) x 5
Yogurt Toppers:
1 Tbsp Grnd Flaxseed + 1 Tbsp Crush Walnut + 1 Tbsp Crushed Pecan x 5
1/2 cup Blueberries x 5

5 oz portion baked Salmon x 5
3/4 cup Brown rice x 5
1 cup steamed kale x 5

5 oz portion grilled chicken breast x 5
3/4 cup brown rice x 5
1/2 cup mashed sweet potatoes x 5

Snacking Fruits:
About 2/3 cup sliced kiwi x 5
One sliced grapefruit x 5
1/5 of a fresh pineapple x 5
1/2 cup red grapes x 5

I am very new to this meal prep but I feel like it turned out pretty well. The salmon and chicken was good and while it didn't taste the best near end of week it was edible and it kept me on track with my macros. The alternative would be to not have it all prepped up and I would fail to meet my goals as my diet would inevitably slip.

However it seems the fruit did not hold up very well over the week. The pineapple held up best, having no discernible difference on Friday in taste or texture as it had earlier in the week. Same for the grapefruit.

However, the smaller berries type fruit did not hold up well. It was perhaps Th or F when I started seeing that a few of my grapes and blueberries had started to sprout mold on certain ones. They also started to get mushy. The kiwi did not get moldy thankfully however it did start to get pretty mushy by mid week. The taste was ok but texture not the best. I really enjoy blueberries on top of my yogurt daily and was wondering what best way to address this issue.

I am storing all food in Rubbermaid (easy find lids) containers. One thing I was thinking was that I wash all fruit before putting in containers and perhaps the fact that there is still slight moisture left on fruit when put into the containers that is causing the mold? Is there any easy way to make sure bulk fruit is 100% dried before putting into containers?

I thought about leaving it out to dry longer in a strainer but it seems leaving the blueberries out very long at room temperature would affect the quality as well.

Perhaps I should alter my meal plan and tend toward other fruit to top my yogurt for the end of the week and only use blueberries for M T W. Are there some fruits that are known to hold up better in the fridge for a longer period of time that I could try for later in the week? Or perhaps for Th and F I could use canned fruit like canned peaches/pineapple/whatever I need to get me through the week?

In regards to the Kiwi/grapes, I was thinking about maybe eating those only earlier in the week and using other fruit or maybe some fresh veg in their place for later in the week?

I'm just looking for advice and incite. I'm happy for anybody who has any suggestions for me. Thanks.
 
This seems like a great plan man. I would cut back on the fruit a little but if your really trying to lean out.

I would also incorporate some more fat into the he diet as well. Also seems like your protein could be a little higher depending on your height and weight etc.
 
You could always top the yogurt with the blueberries just before eating. Problem solved.

That's what I'm doing. I have the blueberries divided into 5 small Rubbermaid containers and I simply dump it over yogurt at time of consumption. Also I have a small container holding the blend of walnuts/pecan/flaxseed that gets dumped on top at time of consumption. The problem is by mid week some of the blueberries have started to mold ):
 
Never seen blueberries go bad that quick. I have had blueberries in the fridge for 2-3 weeks before. They just shrivel...but never have I seen them get mold. I don't think I've ever seen a blueberry with mold. Weird

Thank you for the input. I think it may be the method which I am prepping it up causing the issue. As I said I wash the blueberries in a strainer then divide into 5 Rubbermaid containers, close it up and to the fridge it goes. However, I think because I am putting them away still slightly wet then it is causing bacteria to create mold. Like I don't think I have ever had blueberries mold that fast when they are just left dry in the original container. Now I'm wondering the best way to get 100% of the water evaporated before portioning the berries out.

Thanks so much for the input. I think you may be right. Could you suggest something to replace some of the fruit with? Unfortunately I do not care for veg too much. It is frankly a miracle I made myself eat the veg with my hot meals. I do not think it is feasible I am able to microwave any more meals than I already have been, so I guess that's why I kind of defaulted to fruit that I could simply take out of the fridge and easily eat. Perhaps I need to bring some fresh (uncooked) vegs for snacking? Any suggestions?
 
Well fruit isn't to bad for you. But if your trying to truly lean out then having the fruit can slightly hinder that. The blueberries are good because they are a natural antioxidant. But the fruits are going to hold carbs and natural sugars. Some with argue natural sugar isn't bad for you, but the added carbs and sugars can slow down the fat loss. I would recommend healthy fats like almonds or walnuts (in moderation) or doing veggies like celery, cucumbers, or green peppers. Low calorie snacks that will help fill your stomach. Also get in 1 gallon or so of water a day. Will help suppress hunger a little.

Wash the berries, lay on paper towel, lightly press another paper towel on top, let air dry for a little awhile THEN put in containers. Or just don't wash them . I sure don't.
 
There is nothing wrong with fruit.

I agree, but I actually think I was going overboard with the fruit. I have been feeling bloated and gassy since starting my meal prep and after assessing my diet and doing some googling I believe the fruit may be to blame. Fruit is good of course, but I think I may have been eating fruit as a substitute for more vegs I should have been getting instead. After counting it all up I was probably eating near 10 servings of fruit daily. I have decided to cut that down and try to replace with vegs that contain similar nutrients.

I still want to maintain fresh fruits as a large part of my diet, but I am going to rethink how often I eat them. I'd like to have blueberries daily as they are a great yogurt topper and I love blueberries and they are an antioxidant powerhouse. I've decided to cut down on Kiwi and only have it M T and W since it doesn't seem to last well in the fridge all week anyways, and I will have pineapple W Th and Friday since it seems to hold up the best. I will still eat grapefruit daily since it also holds up well in the fridge.

I'm going to replace some of the fruits I was eating with fresh veg like bell peppers with ranch dip (great snack and I think it should hold up well in fridge) and I'm still deciding what else I can incorporate. I think it would be good to add cooked broccoli into my daily nutrition as it will help make up for some of the nutrients I lose from cutting down on the fruits. I can't do fresh broccoli as it gets stuck in my teeth lol.

I was nervous about changing things up once I got a good plan decided, but I think it's for the best. Now that I am doing the research to figure out how to change things up, it's actually exciting (:
