Ingredients
  • 2 3/4 cups all-purpose flour
  • 3/4 tsp. baking soda
  • 1/2 tsp. salt
  • 1 cup butter at room temperature
  • 1 cup sugar
  • 1 large egg
  • 1 tbsp. vanilla extract
  • Green food coloring

I love Rice Krispie Treats, but I tend to get bored of the same old thing. Instead, how about marshmallow treats using one of my favorite cereals - Lucky Charms!!
An irish treat... lol

Lucky Charms Treats-

5 cups Lucky Charms cereal
3 Tbsp. butter
4 cups marshmallows - That equals 38 big ones, just thought you should know!
1 tsp. milk

Slowly melt the butter in a medium saucepan set over medium-low heat. Do not allow it to brown. Stir in the marshmallows; allow them to melt slowly. Stir in milk. Immediately pour over cereal and stir until cereal is completely coated.

You can press the mixture into a square baking dish (lightly greased), allowing to sit for an hour or so before cutting. You can roll the mixture into balls... or just eat it as is!
 
Limerick ham :)
3-5 lb/ 1 1/2-2 kg ham
cider to cover
1/2 cup brown sugar
1 tsp mustard
20 whole cloves


Cover the ham with cold water and bring slowly to the boil. Throw out the water and replace with cider. Bring this just to the boil and lower the heat, keeping the liquid barely simmering for 20 minutes to the 1 lb/ 1/2 kg. Remove from the heat and allow to stand in the liquid for 30 minutes. Take out the ham, skin it and score the fat with a sharp knife in a diamond pattern. Stud with whole cloves. Mix the sugar and mustard and rub well into the surface of the ham. Bake in a pre-heated oven for a further 10 minutes to the 1 lb / 1/2 kg at gas mark 6, 400°F, 200°C.

Ingredients
1 cup butter
1 1/2 cups confectioners' sugar
1 egg
1 teaspoon vanilla extract
2 1/2 cups all-purpose flour
1 teaspoon baking soda
1 teaspoon cream of tartar
Directions
In a large bowl, cream together butter and confectioners' sugar. Beat in egg and vanilla extract. Mix well.
In a medium sized bowl, stir together the flour, baking soda and cream of tartar. Blend into the butter mixture. Divide dough into thirds and shape into balls.
Working with 1/3 of the dough at a time, roll out dough to 1/4 inch thick on a floured surface. With a knife, cut dough into rectangles about 2 inches high by 3 inches long. (6 x 8 cm).
Place rectangles on an ungreased cookie sheet, 2 inches apart. Bake in a preheated 350 degree F (175 degrees C) oven until lightly browned. Cool completely on wire rack.

Ahem! It's spelled Kansas and for the record, they are not brass anymore. I had them upgraded to Titanium! More durable and much lighter! None of the burning butt hair from lightning anymore either!

My girlfriend loves cheesecake and her parents will be in town over St. Patty's day. Her mom likes making corned beef and cabbage so she decided she wanted to make a dessert. So we've been looking for a dessert to make, I believe we're making this. Win-Win! Although, I don't know if I'll be eating any of it... :)

Irish Creme Chocolate Cheesecake:


1 1/2 cups chocolate cookie crumbs
1/3 cup confectioners' sugar
1/3 cup unsweetened cocoa powder
1/4 cup butter

3 (8 ounce) packages cream cheese, softened
1 1/4 cups white sugar
1/4 cup unsweetened cocoa powder
3 tablespoons all-purpose flour
3 eggs
1/2 cup sour cream
1/4 cup Irish cream liqueur

Chocolate crumb crust
1 (3 oz.) pkg. cream cheese, softened
1/2 c. sugar
1/2 c. cocoa
1/4 c. milk
5 c. frozen non-dairy whipped topping, thawed (about 12 oz.), divided
1/4 to 1/2 tsp. mint extract
Green food color
Mint leaves or shamrocks (optional)
Prepare chocolate crumb crust. In small mixer bowl beat cream cheese until fluffy. Gradually add sugar, beating until well blended. Add cocoa alternately with milk, beating until smooth. Gradually fold in 3 cups whipped topping; spoon mixture over crumb crust.
In small bowl stir remaining 2 cups whipped topping, mint extract and food color; spread over chocolate layer. Cover; chill about 6 hours or until set. Cut into squares. Garnish with mint leaves or shamrocks, if desired.

CHOCOLATE CRUMB CRUST:
1 c. graham cracker crumbs
1/4 c. cocoa
1/4 c. sugar
5 tbsp. butter, melted
In small bowl stir all ingredients until well blended. Press crumb mixture onto bottom of 9 inch square pan.
