Are raw eggs ok? Not if you don't care about the protein!

I picked this up listening to an interview with Richard Wrangham, who wrote Catching Fire: How Cooking Made us Human.

In talking about digestibility of foods, he brought up the fact that - and this was news to me - although meat and protein that reaches the large intestine is consumed before it "exits" your system, it's consumed by intestinal fauna that convert it to to chemicals which are not disgestible by people and get passed. In other words, protein that gets past your small intestines never gets taken up by your body!

This means that measuring protein that's passed by your system doesn't tell you how much protein YOU digested. You need to measure it higher up, where it exits the small intestines, which is nearly impossible with normal people!

On the plus side, scientists can gather data from people who've had the the misfortune of losing their large intestines and have had an illiostomy. These people have a bag that collects everything that exits their small intestine. Think colonostomy bag, but attached much higher up. It's an incredible boon for The Scientists - ready-made intestinal output, pre-bagged!

So a bunch of Belgian gastro-intestinal physiologists were feeding people various cooked and uncooked items, and measuring what comes out undigested. And what did they find?

Nearly half the protein in raw eggs passes undigested! Depending on the person, 55 to 64% of the protein gets digested. But if the eggs are cooked, 94% of the protein is digested. That's a big difference.

Proteins that are cooked undergo some denaturing by the heat, which makes them easier to digest. It actually begins the digestion process... So it doesn't much matter how the eggs are cooked, just that they ARE cooked.

I'm wondering how much heat is necessary, and how much difference it makes... are the rare steak crowd depriving themselves of a lot of the protein they consume?
 
I have heard this.

However, there is an upside for eating raw eggs. The amino acid delivery time is over a significant period of time (cant remember exactly)

I get eggs for free at work, so I will consume at least 6 raw each day in a shake with whey, milk, yoghurt and fruita.
 
word im still going to eat raw eggs, thats sucks for those ppl but im sure i have a better digestive system than them, i live on a farm and eat all kinds of thing including ducks blood.

well it is prepard a spcial way and only on occasion. blood has is full of micro nutrains and active forums od vitamins and amino acids, if u do alil reading on blood ull find its very good for u but i dont drink it or enything haha, just when we have extra it can be made in to a jello like patte and eatin on a craker

You're absolutely right... I originally worded it "... if you don't care about the protein, sure!" Then I re-worded it, intending to say what you said, but botched the job.

That's what I get for proofreading the body, but not the title!
 
This subject has been debated since Adam + Eve my take is i have been eating raw eggs for over 20 years and never had an issue,that's all i can go by..

MaDmaN - this wasn't about the debate on food safety / salmonella. This was about the (roughly) half the protein in eggs doesn't get absorbed if they're not cooked.

I thought that was worth considering. If you get raw eggs cheap and like 'em that way, fine, but if you're carefully measuring protein intake, you should adjust. Personally, I'll just cook 'em.
 
I eat raw eggs in my morning shake at least 5 days a week, this info won't change that. I enjoy the texture and flavor it brings to a shake. I won't eat a steak that's cooked more than medium either, studies be damned. That's a waste of perfectly good steak. :food:

and nor should u! i was jsut reading a study about how the natural creatine in steak decreases with the more wel done the steak is. so basicly the rarer the steak the more creatine you get from it.
 
Raw beef is pretty tough. If you've cooked it enough that it's no longer rubbery, you been denaturing the protein and making the meat more digestible - you don't need to overcook it for it to be cooked.

A nice cut of meat is tender enough to eat raw, I've eaten small slices of raw fillet and it was like butter. I'm a big time carnivore though so to each his own.

Even though the bioavailability of raw eggs is low, the absorbtion rate is very slow - therefore as well as a powerhouse of nutrients and fat, you get this steady trickle of aminos all day.

Not to bring up an old topic but is having eggs everyday for a long period of time bad? some say no some say yes, is there any proof of this?

I just dont wont my cholesterol being outta wack

The short is no.

And yes, there is plenty of proof.
