I have seen the dosing to be 1g, 3x per day, 1 in the morning, 1 pre-workout, 1 pre bed. My question is, since I work out at night and finish about an hour before I go to sleep, should I still be dosing pre-workout and pre bed, or take the second dose earlier, say with dinner?

I don't have any issues with your current dosing to tell you the truth.
 
I know 6 grams is good for a PCT environment...but i'm just looking for some fat loss benefits. So 3 grams would be good, it will last longer too (33 days)
