This could be the problem. I usually train in he morning, but due to schedule occasionally i have to train at night and my sleep is usually disturbed from this. Is there any chance you could train earlier in the day
Agree with this. Try just dairy first. Cottage cheese gets me sometimes... Probably due to the high casein content. With whey I'm ok but back when I drank casein shakes, I would get real gassy from them. Also iirc milk is 80% casein

Big believer in hitting each body part twice a week also (upper/lower splits). Iirc muscle protein synthesis is elevated for 48 hours after hitting that body part ( atleast I remember reading that). If this is true it makes the most sense to hit each body part twice a week.
