I never really tested my limit. The most I ever ate of straight chicken breast in one sitting was 24oz. Not to say I didn't have room for more though haha.

No, I don't use their suggested target macros. I just use it to track overall calories, and my self calculated macros. Also use it to track my weight, the graph they use to illustrate is convenient.

That leaves you with 1680 calories to split amongst carbs and fats. How to decide how you spend those calories is up to you. I will tell you that each gram of carb equates to 4 calories, and each gram of fat equates to 9 calories.

If it were me, I would just stick with the stack your running so you can get a clear idea of its effects. You can always try it later on and if it ends up working nicely for you, throw it in with your next PES stack. I have a feeling this won't be your last ;-)
